Okay, this isn't fun but I thought if this is going to be a cronicle of my Atkins experience, I need to track my progress...to do that, I need to define my starting point. I am not particularly proud of this starting point, but at least I have room for improvement....LOTS of room!

Now that is out of the way, I am feeling wonderful. Yesterday afternoon I had a low point. I had a headache and felt a bit foggy in the brain. I took 2 Excederin Migraine (contains caffiene) and a cup of coffee and that did the trick.
I am planning a big spinach salad for supper and will post about that tomorrow.

Chicken Salad Wraps

Chicken Salad Wraps
Ingredients:
1 pound poached chicken breast
1 celery stalk, chopped
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 tablespoon chopped fresh parsley
8 large lettuce leaves
2 sliced radishes
Directions:
1. Cut chicken into 1/2-inch cubes. Mix celery, mayonnaise, mustard, and parsley in a bowl. Add chicken; toss to coat.
2. Divide into four portions. Serve on large lettuce leaves. Garnish with radishes
Nutritional Information
Per Serving:
Net Carbs: 1 grams
Fiber: 0 grams
Protein: 35.5 grams
Fat: 12.5 grams

Okay, here is the deal...I did the Atkins program back in 2003. I had some success and then allowed myself to be derailed. While on Atkins, I felt great, the weight seemed to come off pretty effortlessly and I had ENERGY (oh, and I lost about 40lbs). Since that time I've continued to struggle with my weight. I've counted calories, counted fat grams, counted steps, counted EVERYTHING except carbs. I am not sure what kept me away from Atkins for so long but since the beginning of this year it has been in the back of my mind that I needed to do Atkins..I need to feel better and have better control over the carbs.
So here I am and I thought that maybe blogging will help me along the way. I started Induction on Sunday, March 7 and so far, so good.
